This delicious Whole30-friendly salad combines crisp EverCrisp® apples, mixed greens, roasted sweet potatoes, and crunchy pecans for a naturally sweet and satisfying bite. A simple balsamic vinegar and olive oil dressing adds bright acidity, while grilled chicken brings protein to keep it filling.

Ingredients
- 1 EverCrisp® apple, thinly sliced
- 1 shallot, thinly sliced
- 2 cups mixed greens
- 2 Tbsp pecans, chopped
- ½ cup sweet potato, diced and roasted
- 2 x 6 oz. chicken breasts, grilled and seasoned with salt, pepper, and paprika
- ¼ cup olive oil
- ¼ cup balsamic vinegar, no sugar added
- Salt and pepper to taste
Directions
- Add the apple, shallot, mixed greens, pecans, and sweet potato to a bowl.
- To make the dressing: whisk together oil, balsamic vinegar, salt, and pepper.Â
- Toss salad with dressing and top with grilled chicken.
