This Spiced Apple Olive Oil Cake blends warm Burlap & Barrel spices, tender EverCrisp® apples, and rich Brightland olive oil. Ingredients
Olive Oil Cake
- 4 EverCrisp® apples
- Juice of ½ lemon
- 3 Tbsp Burlap & Barrel Cinnamon Sugar Crunch
- 1 ½ cups flour
- 2 tsp baking powder
- ½ tsp salt
- ½ tsp Burlap & Barrel Royal Cinnamon
- ÂĽ tsp Burlap & Barrel Cloud Forest Cardamom
- 2 eggs, room temperature
- â…“ cup Brightland Awake Extra Virgin Olive Oil
- 1 tsp vanilla extract
- Âľ cup brown sugar
- ½ cup whole milk, room temperature
- Powdered sugar, for topping
Honey Whipped Cream
- 1 cup heavy cream
- ÂĽ cup Brightland Orange Blossom Honey
- ÂĽ tsp Burlap & Barrel Royal Cinnamon
Directions

Preheat the oven to 375° F and grease and line a 9 inch cake pan with parchment paper.

Thinly slice apples and add to a bowl. Toss with lemon juice and cinnamon sugar crunch.

In a medium bowl combine flour, baking powder, salt, cinnamon, and cardamom. Whisk together until well combined.

In a large bowl add eggs, olive oil, vanilla, brown sugar, and milk. Whisk well until well combined.

Pour the dry ingredients into the wet and gently fold until no flour streaks remain.

Toss in Âľ of the apples and fold gently to combine.

Top the cake with the remaining apples and sprinkle more cinnamon sugar crunch over the top.

Bake for 50-60 minutes until golden brown and a toothpick inserted comes out clean.

While the cake cools to room temperature, prepare the whipped cream. Combine the heavy cream, honey, and cinnamon in a bowl and whisk until stiff peaks form.

Top the cake with a dusting of powdered sugar, a dollop of whipped cream, and a drizzle of olive oil.Â
