Matcha with Apple Syrup

Ingredients
- 2 medium apples, roughly chopped (we like EverCrisp®, Fuji, or Gala)
- 3 Tbsp light brown sugar
- 1 tsp vanilla extract
- 1 ½ tsp ground cinnamon
- ½ tsp salt
- ½ cup water
- ½ cup milk of choice
- Matcha of choice
Directions
- Add apples, brown sugar, cinnamon, and salt to a pan. Cook over medium heat for about 10 minutes, stirring occasionally, until the apples are softened.
- Allow apples to cool completely, then add to a blender with ½ cup of water. Add more as needed to thin out the mixture (if it looks like applesauce, it's too thick).
- Add blended apples back to pan and add vanilla extract. Continue to cook for 5-10 minutes until the liquid has reduced a touch and become more syrupy.
- Whisk together matcha and milk in a glass, then add 2 Tbsp apple syrup. Mix and add ice, then top with cold foam and cinnamon if desired.
