Cottage Cheese Apple Pancakes
Yield: 8 pancakes
Ingredients
- 1 apple, cored and sliced into 8 thin rings (we like EverCrisp®, Gala, Honeycrisp, or SweeTango®)
- ½ cup full-fat cottage cheese
- 2 eggs
- 1 tsp vanilla extract
- ⅔ cup rolled oats
- 1 tsp baking powder
- 1 tsp ground cinnamon
- Pinch of salt
- Water or milk of choice (if batter is too thick)
Directions
- Add wet ingredients (cottage cheese, eggs, and vanilla) to a blender. Pulse to combine.
- Add dry ingredients (rolled oats, baking powder, ground cinnamon, and salt) to the wet mixture. Blend until smooth. If batter is too thick, add 1-2 Tbsp water or milk of choice.
- Grease a large skillet with butter or neutral oil. Heat over medium, then, working in batches, add sliced apples.
- Pour batter over apples. Cook until bubbles form, then flip.
- Serve with your favorite pancake toppings!
