Cinnamon Apple Bundt Cake

Ingredients
Cake
- 1 cup light brown sugar
- ¼ cup granulated sugar
- 1 cup vegetable oil
- ½ cup dairy-free yogurt of choice
- 3 eggs
- 1 Tbsp vanilla extract
- 3 cups flour
- 1 tsp baking soda
- 1 Tbsp ground cinnamon
- ½ tsp salt
- 3 cups or just under 3 medium apples, chopped (we like EverCrisp®, Honeycrisp®, and SweeTango®)
- Optional: caramel sauce to top
Cinnamon Sugar Swirl
- ⅓ cup granulated sugar
- 1 Tbsp ground cinnamon

Preheat oven to 325º F. Grease and flour a bundt pan.
- In a large bowl, combine brown sugar, granulated sugar, oil, dairy-free yogurt, eggs, and vanilla.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Add dry ingredients to wet mixture, stirring until just combined. Gently fold in chopped apples without over-mixing.
- In a small bowl, combine ⅓ cup granulated sugar and 1 Tbsp cinnamon. Set aside.
- Pour half of the cake batter into the bundt pan, then sprinkle a generous and even layer of cinnamon sugar on top. Top with remaining batter.
- Bake for 50-60 minutes, until a toothpick inserted in the thickest part of the cake comes out clean.
- Allow to cool for 15 minutes in the pan, then transfer to a wire rack to cool completely.
- Drizzle warm caramel sauce on top and enjoy!
