Applesauce Cake

Ingredients

    • 1 ½ cups all-purpose flour
    • 1 tsp baking soda
    • ½ tsp baking powder
    • 1 tsp ground cinnamon
    • ½ tsp ground nutmeg
    • ¼ tsp kosher salt
    • ½ cup (1 stick) unsalted butter, softened
    • ½ cup light brown sugar, packed
    • ¼ cup granulated sugar
    • 1 cup unsweetened applesauce
    • 1 tsp vanilla extract
    • 1 medium apple, peeled and diced (we like Ambrosia, Gala, and Honeycrisp)
    • ½ cup chopped pecans
    • Optional: powdered sugar for dusting

       

      Directions

        1. Preheat oven to 350º F. Grease a round cake tin.
        2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
        3. Cream the butter with both sugars and vanilla extract until light and fluffy. You can do this by hand or with a mixer. 
        4. Stir in the applesauce, then fold in the dry ingredients until just combined.
        5. Fold in apple and pecans.
        6. Pour batter into cake tin and bake for 35-40 minutes, until top is golden brown and a toothpick inserted in the center comes out clean.
        7. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely. Dust with powdered sugar and enjoy!
