Applesauce Cake

Ingredients
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp kosher salt
- ½ cup (1 stick) unsalted butter, softened
- ½ cup light brown sugar, packed
- ¼ cup granulated sugar
- 1 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1 medium apple, peeled and diced (we like Ambrosia, Gala, and Honeycrisp)

½ cup chopped pecans
- Optional: powdered sugar for dusting
Directions
- Preheat oven to 350º F. Grease a round cake tin.
- In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
- Cream the butter with both sugars and vanilla extract until light and fluffy. You can do this by hand or with a mixer.
- Stir in the applesauce, then fold in the dry ingredients until just combined.
- Fold in apple and pecans.
- Pour batter into cake tin and bake for 35-40 minutes, until top is golden brown and a toothpick inserted in the center comes out clean.
- Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely. Dust with powdered sugar and enjoy!
