Apple-Raisin Overnight Oats

Ingredients

Apple-Raisin Compote
    • 2 cups apples, peeled and diced into  ½ in. pieces (we like a combination of Gala and SnapDragon®)
    • 2 Tbsp pure maple syrup
    • ¾ cup raisins
    • ½ tsp ground cinnamon
    • Pinch of salt
    • 2 Tbsp water

    Overnight Oat Base

      • 2 ¼ cups old fashion oats
      • 1 cup yogurt (if using Greek yogurt, add an extra  ¼ cup water or oats will be too thick)
      • 1 cup milk (sub non-dairy milk of choice)
      • 1 cup cold water
      • 2 Tbsp pure maple syrup
      • 3 Tbsp almond or cashew butter
      • ¼ tsp ground nutmeg
      • ¼ tsp ground clove
      • 2 tsp vanilla extract
      • ¼ tsp salt
      • Optional: 1 Tbsp of chia seeds, hemp seeds, or ground flax

      Directions

      Apple-Raisin Compote
        1. Mix apples, maple syrup, raisins, cinnamon, salt, and water in a saucepan. Heat over medium, stirring occasionally, until the apples are tender and lightly caramelized—3 to 5 minutes.
        2. Cool to room temperature before assembling.

        3. Note: If the apples are browning too quickly, turn the heat down and add another 1 to 2 tablespoons of water.

      Overnight Oat Base

        1. In a medium bowl, whisk together all oat base ingredients. The mixture will be loose, but will firm up while refrigerating.

      Assembly

        1. Spoon half of the oats into the bottom of six 8 oz. jars. Layer half of the compote evenly in each jar. Top with remaining oats, then remaining compote (dividing equally between jars). 
        2. Cover with lids and refrigerate for several hours, up to five days. Enjoy!
