KBBQ Salad with Apple Kimchi Sauce

Ingredients
Apple Kimchi Sauce
- ½ apple, peeled and chopped (we like Fuji or Gala for the sweetness!)
- 1 Tbsp rice wine vinegar
- 1 Tbsp gochujang
- 1 tsp soy sauce
- 1 tsp sesame oil
- 1 tsp honey or maple syrup
- 1 garlic clove
- Optional: ⅛ tsp ground ginger
Salad
- 2 cups romaine lettuce, chopped
- ½ cup fresh cucumber kimchi
- ½ cup pickled cabbage (we like quick-pickled red cabbage)
- ¼ cup crispy onions
- ½ cup Apple Kimchi Sauce
- 2 Tbsp Korean BBQ glaze or bulgogi sauce
- Optional: sesame seeds, thinly sliced scallions
Directions
- Add all ingredients for the Apple Kimchi Sauce to a blender. Blend until smooth and taste. Adjust for heat or sweetness if needed. If too thick, add cold water 1 Tbsp at a time to thin out.
- Assemble salad and drizzle KBBQ glaze on top and a sprinkle of sesame seeds and scallions.
Notes
- This salad acts as a great base. To level it up, add white rice and your favorite protein or roasted veggies, like spicy broccoli or roasted sweet potatoes!
- Store Apple Kimchi Sauce in an airtight container in the fridge for up to 3 days.
