KBBQ Salad with Apple Kimchi Sauce

Ingredients

Apple Kimchi Sauce

    • ½ apple, peeled and chopped (we like Fuji or Gala for the sweetness!)
    • 1 Tbsp rice wine vinegar
    • 1 Tbsp gochujang
    • 1 tsp soy sauce
    • 1 tsp sesame oil
    • 1 tsp honey or maple syrup
    • 1 garlic clove
    • Optional: ⅛ tsp ground ginger

Salad 

    • 2 cups romaine lettuce, chopped
    • ½ cup fresh cucumber kimchi
    • ½ cup pickled cabbage (we like quick-pickled red cabbage)
    • ¼ cup crispy onions
    • ½ cup Apple Kimchi Sauce
    • 2 Tbsp Korean BBQ glaze or bulgogi sauce
    • Optional: sesame seeds, thinly sliced scallions


      Directions

        1. Add all ingredients for the Apple Kimchi Sauce to a blender. Blend until smooth and taste. Adjust for heat or sweetness if needed. If too thick, add cold water 1 Tbsp at a time to thin out.
        2. Assemble salad and drizzle KBBQ glaze on top and a sprinkle of sesame seeds and scallions.


          Notes

            1. This salad acts as a great base. To level it up, add white rice and your favorite protein or roasted veggies, like spicy broccoli or roasted sweet potatoes!
            2. Store Apple Kimchi Sauce in an airtight container in the fridge for up to 3 days.
