Apple Granola

Yield: 2 to 2 ½ cups of granola (4-6 servings)
Ingredients
- 1 cup old-fashioned rolled oats
- 2 medium apples (we like EverCrisp®, Gala, Honeycrisp, or Pink Lady®)
- 1 Tbsp flaxseed
- 1 Tbsp chia seeds
- 2 Tbsp coconut oil, melted
- 1 tsp ground cinnamon
- ¼ tsp ground ginger
- Pinch of salt
Directions
- Preheat oven to 350º F and line a baking sheet with parchment paper.
- Shred apples (skin on) in a large bowl. Add oats, flaxseed, chia seeds, and spices. Mix well to combine.
- Toss with melted coconut oil and spread evenly on the prepared baking sheet.
- Bake for 30-40 minutes, stirring at least twice to ensure even cooking. The granola will be golden brown and toasty when ready.
- Remove and allow to cool completely before storing in an airtight container at room temperature for up to 1 week.
- Enjoy over yogurt, ice cream, with milk, on its own—the possibilities are endless!
