Apple Granola

Apple Granola

Bake Time: 30-40 minutes
Yield: 2 to 2 ½ cups of granola (4-6 servings)

 

Ingredients

    • 1 cup old-fashioned rolled oats
    • 2 medium apples (we like EverCrisp®, Gala, Honeycrisp, or Pink Lady®)
    • 1 Tbsp flaxseed
    • 1 Tbsp chia seeds
    • 2 Tbsp coconut oil, melted
    • 1 tsp ground cinnamon
    • ¼ tsp ground ginger
    • Pinch of salt


      Directions

        1. Preheat oven to 350º F and line a baking sheet with parchment paper.
        2. Shred apples (skin on) in a large bowl. Add oats, flaxseed, chia seeds, and spices. Mix well to combine.
        3. Toss with melted coconut oil and spread evenly on the prepared baking sheet.
        4. Bake for 30-40 minutes, stirring at least twice to ensure even cooking. The granola will be golden brown and toasty when ready.
        5. Remove and allow to cool completely before storing in an airtight container at room temperature for up to 1 week.
        6. Enjoy over yogurt, ice cream, with milk, on its own—the possibilities are endless!
