Apple "Caviar"

This SweeTango® apple "caviar" is sure to impress! Sweet, tart, and lightly spiced with cinnamon, the apples are transformed into delicate, jewel-like pearls using agar agar and chilled oil. Serve with ginger-spiced cookies, vanilla yogurt, and lime zest for a fun presentation.

Ingredients

      • 2 SweeTango® apples
      • Juice of ½ lemon
      • 2 Tbsp brown sugar
      • 1 tsp ground cinnamon
      • 1g agar agar powder
      • 2 cups neutral oil
      • Optional (for serving): thin ginger spiced cookies, vanilla yogurt, and lime zest


    Directions

      1. Add 2 cups of oil to a tall glass and place in the freezer. The oil must be cold and chilled for at least an hour. 

      2. Chop apples into small pieces. Add to a saucepan with lemon juice, brown sugar, and cinnamon. 

      3. Heat over medium heat, just until the sugar melts.

      4. Add to a blender and blend until smooth. Strain well through a sifter or cheese cloth.

      5. Measure out 100ml of the apple juice mixture and add to a saucepan with the agar agar and whisk over medium heat until smooth. Let the mixture come to a boil and then remove from the heat and let cool for 5-10 minutes. If the mixture cools down too quickly and the agar agar sets firm, heat up the pan slowly until it becomes liquid again.

      6. Use a dropper to drop the liquid into the tall glass of oil. Little beads will form and sink to the bottom of the glass.

      7. Strain the caviar and rinse quickly under cold water.

      8. Serve immediately.
