Apple, Beet, and Goat Cheese Salad

Ingredients

Salad

    • 2 medium apples (we like EverCrisp®, Honeycrisp, Pink Lady, or SweeTango®), thinly sliced
    • 2 cups boiled or roasted and cooled beets, skin removed and diced
    • 2 oz. goat cheese, crumbled (try this recipe from Inspired Taste!)
    • ½ cup candied nuts, like walnuts or pecans
    • 16 oz. arugula or mixed greens

Dressing

    • 4 Tbsp Extra Virgin Olive Oil
    • 2 Tbsp champagne or apple cider vinegar
    • 1 Tbsp freshly squeezed lemon juice
    • 1 Tbsp maple syrup
    • ½ tsp Dijon mustard
    • Salt and pepper to taste

Directions

Dressing

      1. Add vinegar, lemon juice, maple syrup, Dijon, salt, and pepper to a jar. Shake to mix slightly, then pour in olive oil. Shake vigorously to emulsify the dressing.
      2. Taste for seasoning and adjust as needed.

Assembly

      1. Add all salad ingredients to a large serving bowl. Toss with dressing and enjoy!
