Apple, Beet, and Goat Cheese Salad

Ingredients
Salad
- 2 medium apples (we like EverCrisp®, Honeycrisp, Pink Lady, or SweeTango®), thinly sliced
- 2 cups boiled or roasted and cooled beets, skin removed and diced
- 2 oz. goat cheese, crumbled (try this recipe from Inspired Taste!)
- ½ cup candied nuts, like walnuts or pecans
- 16 oz. arugula or mixed greens
Dressing

- 4 Tbsp Extra Virgin Olive Oil
- 2 Tbsp champagne or apple cider vinegar
- 1 Tbsp freshly squeezed lemon juice
- 1 Tbsp maple syrup
- ½ tsp Dijon mustard
- Salt and pepper to taste
Directions
Dressing
- Add vinegar, lemon juice, maple syrup, Dijon, salt, and pepper to a jar. Shake to mix slightly, then pour in olive oil. Shake vigorously to emulsify the dressing.
- Taste for seasoning and adjust as needed.
Assembly
- Add all salad ingredients to a large serving bowl. Toss with dressing and enjoy!
