Whipped Goat Cheese & Roasted Cherry Toast

Ingredients

Whipped Goat Cheese
    • 4 oz. (1 small log) goat cheese
    • 2 Tbsp Greek yogurt or sour cream
    • 1 Tbsp honey
    • 1 Tbsp olive oil
    • ½ tsp salt

Roasted Cherries

    • 2 cups fresh or frozen cherries, pitted
    • 2 Tbsp balsamic vinegar
    • 1 Tbsp olive oil
    • ½ tsp salt
    • ½ tsp black pepper

Assembly

    • 2 slices of sourdough bread
    • ½ EverCrisp® apple, thinly sliced
    • 2 Tbsp almonds, slivered
    • 1 Tbsp olive oil
    • Optional: honey and fresh mint leaves

 

Directions

    1. Preheat oven to 400º F. 
    2. In a small bowl, toss together roasted cherry ingredients in a small bowl. Spread in an even layer on a rimmed baking sheet and roast for 5-8 minutes, until cherries are jammy and caramelized.
    3. While cherries roast, combine goat cheese, Greek yogurt, honey, olive oil, and salt in the bowl of a food processor. Blend until smooth and creamy.
    4. Add 1 Tbsp olive oil to a skillet over medium-high heat. Toast sourdough slices, flipping halfway, until bread is golden brown.
    5. Remove sourdough from skillet and add slivered almonds to the remaining oil in the pan. Toast almonds, stirring constantly to prevent burning, for 2-3 minutes, until almonds are golden.
    6. To assemble: spread whipped goat cheese mixture on sourdough slices, then add a layer of Evercrisp® apples. Spoon roasted cherries (and the juices!) over apples, then sprinkle on toasted almonds. Garnish with a drizzle of honey and fresh mint leaves if desired.
