Whipped Goat Cheese & Roasted Cherry Toast
Ingredients
Whipped Goat Cheese- 4 oz. (1 small log) goat cheese
- 2 Tbsp Greek yogurt or sour cream
- 1 Tbsp honey
- 1 Tbsp olive oil
- ½ tsp salt
Roasted Cherries
- 2 cups fresh or frozen cherries, pitted
- 2 Tbsp balsamic vinegar
- 1 Tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
Assembly
- 2 slices of sourdough bread
- ½ EverCrisp® apple, thinly sliced
- 2 Tbsp almonds, slivered
- 1 Tbsp olive oil
- Optional: honey and fresh mint leaves
Directions
- Preheat oven to 400º F.
- In a small bowl, toss together roasted cherry ingredients in a small bowl. Spread in an even layer on a rimmed baking sheet and roast for 5-8 minutes, until cherries are jammy and caramelized.
- While cherries roast, combine goat cheese, Greek yogurt, honey, olive oil, and salt in the bowl of a food processor. Blend until smooth and creamy.
- Add 1 Tbsp olive oil to a skillet over medium-high heat. Toast sourdough slices, flipping halfway, until bread is golden brown.
- Remove sourdough from skillet and add slivered almonds to the remaining oil in the pan. Toast almonds, stirring constantly to prevent burning, for 2-3 minutes, until almonds are golden.
- To assemble: spread whipped goat cheese mixture on sourdough slices, then add a layer of Evercrisp® apples. Spoon roasted cherries (and the juices!) over apples, then sprinkle on toasted almonds. Garnish with a drizzle of honey and fresh mint leaves if desired.
