"Taste the Rainbow" Sandwich

    • ½ EverCrisp® or Honeycrisp apple, thinly sliced
    • 2 slices of whole grain bread
    • Plain hummus, to taste
    • ½ ripe avocado, mashed
    • 1 small carrot, peeled and julienned
    • ½ cup red cabbage, shredded
    • Handful of kale, deveined
    • Salt and pepper to taste



    1. Spread hummus on one slice of bread and mashed avocado on the other.
    2. Sprinkle salt and pepper to taste over the avocado side.
    3. Pile apples, carrots, cabbage, and kale on the hummus side.
    4. Sandwich both sides together. Cut in half and enjoy!
