Peanut Butter Apple Crisp

Ingredients

Crust
    • 1 ¼ cups old-fashioned oats
    • 1 ½ cups brown sugar
    • 1 ½ cups flour
    • ¾ cup unsalted butter, melted
    • 1 tsp. ground cinnamon
    • ½ tsp. salt

Filling

    • 10 cups (about 8 medium-sized apples), peeled and sliced (we like Honeycrisp, Pink Lady®, or SweeTango®)
    • 1 cup granulated sugar
    • 2 Tbsp. cornstarch
    • ½ tsp. salt
    • 1 cup water
    • 1 tsp. vanilla extract
    • ⅔ cup NuttZo Peanut Trail Mix (substitute any creamy nut butter)

    Directions

      1. In a medium bowl, combine oats, brown sugar, flour, cinnamon, salt, and butter until a crumbly mixture forms. Spread half of this mixture into the bottom of a greased 9 in. x 13 in. pan or 9 in. round pie pan and press down firmly to create the crust.
      2. Place peeled and sliced apples in a large bowl of cold water and lemon juice to prevent browning.
      3. In a medium saucepan, whisk together sugar, cornstarch, salt, water, and vanilla. Cook over high heat, whisking regularly, until thickened. Remove from the burner and stir in peanut butter until smooth.
      4. Drain the water and lemon juice off of the apples and pour the peanut butter mixture over them. Stir until all of the apples are well coated. Spread the apples over the oatmeal crust.
      5. Sprinkle the remainder of the oatmeal mixture over the apples.
      6. Bake at 350° F for 1 hour. Let cool to room temperature before serving.
