Low-Carb Apple Crisp

Ingredients
Apple Filling
- 2 lb. SweeTango® apples, chopped (about 5 apples)
- 2 Tbsp apple cider vinegar
- 1 tsp vanilla extract
- ½ tsp kosher salt
- 2 tsp cinnamon
- ¼ cup sugar-free sweetener
- ½ Tbsp cornstarch
Topping
- ½ cup gluten-free rolled oats
- ½ cup unsweetened shredded coconut flakes
- ⅔ cup almond flour
- ⅔ cup pecans, chopped
- ¼ cup sugar-free sweetener
- 1 tsp ground cinnamon
- ½ tsp kosher salt
- 8 Tbsp unsalted butter, melted
Directions
- Preheat oven to 350° F. Grease a 9 in. x 13 in. baking dish with butter.
- In a large mixing bowl, toss apples with sweetener, apple cider vinegar, cinnamon, vanilla, salt, and cornstarch.
- Pour apples into baking dish and bake for 30 minutes to soften.
- Mix topping ingredients in a bowl, saving melted butter for last. Stir to combine and ensure everything is evenly distributed.
- Remove apples and top with crumble.
- Return dish to the oven and bake for an additional 30 minutes, until the top is golden brown. Allow to cool for 10-20 minutes before serving.
