Caramelized Onion & Apple Grilled Cheese

Ingredients

Caramelized Onions
    • 2 yellow onions, thinly sliced
    • 1 Tbsp unsalted butter
    • 1 Tbsp fresh thyme or 1 tsp dried thyme
    • Salt and pepper to taste

Grilled Cheese

    • 8 slices of sourdough bread
    • 2 cups white cheddar, shredded
    • 2 cups gouda, shredded
    • 1-2 EverCrisp® apples, thinly sliced
    • Unsalted butter or olive oil
       

      Directions

      Caramelized Onions
        1. Heat a heavy-bottomed pan over medium. Add butter. When melted, add onions and season with thyme, salt, and pepper.
        2. Once onions become translucent, reduce heat to medium-low and continue to cook. Stir every few minutes, making sure that onions do not burn or stick to the pan. Add a splash of water if pan becomes too dry.
        3. Continue cooking for about one hour, until onions become deeply brown and soft. Set aside.

      Assembly

        1. Top 4 slices of sourdough bread with ¼ cup each of shredded white cheddar and shredded gouda.
        2. Arrange slices of EverCrisp® apples over cheese. Top with caramelized onions and second slice of bread.
        3. Heat a skillet over medium. Butter both sides of each sandwich and add to hot skillet. Cook for 3-5 minutes per side or until bread is golden brown, adjusting heat to ensure that sandwiches don't burn. Enjoy!
