Prep Time: ~30 minutes + 30 minutes chill time
Cook Time: 10-15 minutes + 3-4 hours setting time
Yield: 9 bars



    • 2 Honeycrisp apples, shredded
    • 1 cup date sugar
    • ⅓ tsp ground cardamom
    • 1 cup desiccated coconut
    • ½ cup ghee or clarified butter
    • ½ cup milk
    • 6-7 strands of saffron
    • ½ cup pistachios, crushed
    • Optional: saffron strands and edible flours for garnish


      1. Overnight: soak saffron strands in milk overnight.
      2. In a medium saucepan, add ghee or clarified butter and apples. Cook apples until all moisture is evaporated.
      3. Add sugar, desiccated coconut, cardamom, and entire milk/saffron mixture. Stir to combine. Continue cooking over a low flame for about 10 minutes, until a dough-like consistency forms.
      4. Press dough into a 9 in. x 9 in. baking sheet. Place in the fridge for 3-4 hours to set.
      5. Dust with a layer of crushed pistachios and cut into 9 even bars.
      6. Garnish with saffron strands and edible flours.
