Apple & Pistachio Barfi
Prep Time: ~30 minutes + 30 minutes chill time
Cook Time: 10-15 minutes + 3-4 hours setting time
Yield: 9 bars
Ingredients
- 2 Honeycrisp apples, shredded
- 1 cup date sugar
- ⅓ tsp ground cardamom
- 1 cup desiccated coconut
- ½ cup ghee or clarified butter
- ½ cup milk
- 6-7 strands of saffron
- ½ cup pistachios, crushed
- Optional: saffron strands and edible flours for garnish
Directions
- Overnight: soak saffron strands in milk overnight.
- In a medium saucepan, add ghee or clarified butter and apples. Cook apples until all moisture is evaporated.
- Add sugar, desiccated coconut, cardamom, and entire milk/saffron mixture. Stir to combine. Continue cooking over a low flame for about 10 minutes, until a dough-like consistency forms.
- Press dough into a 9 in. x 9 in. baking sheet. Place in the fridge for 3-4 hours to set.
- Dust with a layer of crushed pistachios and cut into 9 even bars.
- Garnish with saffron strands and edible flours.
