Apple & Granola Parfait
Yield: 3 parfaits
Ingredients
Apple Compote- 3 medium apples, diced (we like EverCrisp®, Fuji, or Honeycrisp)
- 2 Tbsp maple syrup
- 2 Tbsp water
- Pinch of salt
Parfait
- 2 ¼ cups Greek yogurt, plain or vanilla
- 6 Tbsp granola of choice
Directions
Apple Compote- Mix apples, maple syrup, 2 Tbsp water, and salt in a saucepan. Heat over medium, stirring occasionally, until the apples are tender, 3 to 5 minutes. Note: If apples are browning too quickly, turn down heat and add another 1-2 Tbsp water.
- Cool to room temperature before assembling.
Assembly
- Spoon apple compote evenly into 3 jars or glasses. Add ¾ cup Greek yogurt to each jar, then top with 2 Tbsp of granola. If preparing in advance, leave off granola until serving.
