Best For: Breakfast, Dessert
Prep Time: 15 minutes
Bake Time: 40-50 minutes
Yield: 1 loaf
Ingredients
- ½ cup (1 stick) unsalted butter, softened
- ⅓ cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ⅔ cup milk of choice
- 1 SnapDragon® apple, peeled and diced
- ½ cup dulce de leche
- 1 Tbsp unsalted butter, melted
- 1 Tbsp packed brown sugar
- ¼ tsp ground cinnamon
Directions
- Preheat oven to 350º F. Liberally spray a loaf pan with non-stick spray.
- Cream butter and sugar using an electric hand mixer or stand mixer on medium speed, until the mixture is light in color and fluffy. Reduce speed and beat in one egg at a time. Scrape down sides after each egg is added and continue to beat mixture, adding vanilla once both eggs are incorporated.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the mixer, alternating with the milk.
- Turn off the mixer and gently fold in 1½ cups SnapDragon® apples.
- Pour half of the batter into the greased loaf pan. Spoon half of the dulce de leche over the batter and swirl using a knife to create a marbled effect. Top with remaining batter and repeat swirling with remaining remaining dulce de leche.
- In a small bowl, mix the remaining apples with melted butter, brown sugar, and cinnamon. Spread evenly over batter, gently pressing apples into batter.
- Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and allow to cool for 10 minutes in the pan. Transfer to a wire rack and cool completely before serving.
