Apple Cobbler

Ingredients
Crust- ½ cup almond flour
- ½ cup coconut flour
- ¼ cup coconut oil, melted
- 1 tsp vanilla extract
- 2 apples, sliced (we recommend Cortland, Empire, or Fuji)
- 1 Tbsp ground cinnamon
- 1 Tbsp coconut oil, melted
- 2 Tbsp freshly squeezed lemon juice
- 1 Tbsp monk fruit sweetener
- 2 Tbsp maple syrup
- ¼ cup almond flour
- 2 Tbsp coconut flour
- 1 Tbsp ground cinnamon
- 1 tsp monk fruit sweetener
Directions
- Preheat oven to 350º F.
- Combine crust ingredients in a large bowl and spread evenly into a sprayed 9 in. x 13 in. baking dish. Press until crust is packed.
- Bake crust for 10 minutes.
- Mix filling ingredients in a separate bowl, then add to par-baked crust. Bake for an additional 20 minutes.
- Combine topping ingredients in a small bowl. Sprinkle over baked filling.
- Return cobbler to the oven for 10 minutes, broiling for the last 1-2 minutes, or until the top is golden brown.
