Apple Cinnamon Breakfast Muffins

    • 1 ½ cups all-purpose flour
    • 1 tsp ground cinnamon
    • 1 tsp baking powder
    • ½ tsp baking soda
    • ½ tsp salt 
    • 1 stick (½ cup) unsalted butter, melted and cooled to room temperature
    • 2 large eggs
    • 1 tsp vanilla extract
    • ½ cup granulated sugar
    • ¼ cup light brown sugar, packed
    • 3 medium apples, diced (we like EverCrisp®, Fuji, Honeycrisp, McIntosh, or Pink Lady®)
    • Optional: cinnamon sugar for topping (2 Tbsp granulated sugar + 1 tsp ground cinnamon)


      1. Preheat oven to 350º F. Line a muffin tin with paper.
      2. In a medium bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt.
      3. In a large bowl, whisk together melted butter, eggs, vanilla extract, granulated sugar, and light brown sugar. Add dry ingredients to wet and mix until just combined, then fold in diced apples.
      4. Pour batter evenly into muffin tin and sprinkle cinnamon sugar on top. Bake for 25-30 minutes until muffins are set. Allow to cool slightly before serving.
