Apple Cinnamon Breakfast Muffins
Yield: 8 muffins
Ingredients
- 1 ½ cups all-purpose flour
- 1 tsp ground cinnamon
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 stick (½ cup) unsalted butter, melted and cooled to room temperature
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup granulated sugar
- ¼ cup light brown sugar, packed
- 3 medium apples, diced (we like EverCrisp®, Fuji, Honeycrisp, McIntosh, or Pink Lady®)
- Optional: cinnamon sugar for topping (2 Tbsp granulated sugar + 1 tsp ground cinnamon)
Directions
- Preheat oven to 350º F. Line a muffin tin with paper.
- In a medium bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt.
- In a large bowl, whisk together melted butter, eggs, vanilla extract, granulated sugar, and light brown sugar. Add dry ingredients to wet and mix until just combined, then fold in diced apples.
- Pour batter evenly into muffin tin and sprinkle cinnamon sugar on top. Bake for 25-30 minutes until muffins are set. Allow to cool slightly before serving.
