Apple Cinnamon Baked Oatmeal Cups

You only need a handful of simple ingredients to make these cups. They’re lightly sweetened, soft and chewy, and filled with apple cinnamon flavor in every bite!

Yield: 12 muffin-sized cups
Ingredients
- 1 Honeycrisp apple, diced into ¼ inch cubes (about 2½ cups)
- 2 Tbsp flax meal
- 5 Tbsp warm water
- ¾ cup unsweetened applesauce
- ⅓ cup maple syrup
- 2 cups unsweetened soy milk
- 1 tsp vanilla extract
- 3 cups old fashioned rolled oats
- 1½ tsp ground cinnamon
- ¼ tsp ground ginger
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 1 tsp baking powder
Directions
- Preheat oven to 350º F. Lightly grease a muffin tin with oil or line with paper or reusable liners.
- Whisk together flax meal and warm water to make flax egg. Set aside until a gel-like consistency forms.
- Add flax egg to a large mixing bowl with applesauce, maple syrup, soy milk, and vanilla extract. Stir to combine.
- Add dry ingredients to wet and stir, then fold in apple cubes.
- Fill each muffin cup to the top, about ⅓ to ½ cup of batter. There should be enough batter for 12 cups.
- Bake for 25-30 minutes, until the tops are browning and a toothpick inserted in the center comes out clean.
- Allow to cool slightly, then run a butterknife around the edge of each cup to release from pan.
- Enjoy immediately or store in an airtight container in the fridge for up to 5 days!
