  • 1/2 New York apple, thinly sliced

  • 1/2 avocado, mashed

  • 2 slices whole-grain bread

  • Hummus (we love Ithaca Cold-Crafted Classic Hummus)

  • Carrot, julienned

  • Red cabbage, julienned

  • Kale leaves, deveined

  • Sprinkle of salt and pepper

Directions

    Spread hummus on one piece of bread

    Spread mashed avocado on the other piece of bread
  3. 3.
    Pile apples, kale, carrots, and red cabbage on hummus side
  4. 4.
    Sprinkle with salt and pepper
  5. 5.
    Sandwich bread together
  6. 6.
    Cut in half
