Ingredients
Dressing
- ½ c extra virgin olive oil
- ½ c apple cider vinegar
- 2 Tbsp dijon mustard
- ¼ tsp salt
Salad
- 2 SnapDragon apples, cored and thinly sliced
- 12 oz. arugula (or baby greens—we like arugula for its bite!)
- ¼ c pickled red onion
- ½ c slivered almonds
- ¼ c fresh blackberries
Directions
- Whisk together salad dressing ingredients and adjust seasoning to taste.
- Assemble salad and drizzle dressing over to serve.
