  • 1 Tbsp coconut oil
  • 1 SnapDragon apple, finely chopped
  • 3 Tbsp almond flour
  • ½ tbsl walnuts
  • 1 egg, beaten
  • ½ Tbsp maple syrup
  • 1 tsp cashew butter
  • ¼ tsp baking powder
  • ½ tsp apple pie spice (or ½ tsp cinnamon + pinch of ground clove)
  • pinch of salt

optional: ¼ tsp coconut or turbinado sugar


  1. Coat mug well with coconut oil
  2. In a small bowl, combine all ingredients except ¼ c chopped apple (save for later)
  3. Spoon mixture into greased mug, then top with remaining chopped apple and a pinch of cinnamon and coconut or turbinado sugar
  4. Microwave on high for 1 minute 45 seconds to 2 minutes, or until the cake is puffy and cooked on top
  5. Serve with ice cream, nut butter, or yogurt
