Apple Dulce de Leche Bread

Dulce de leche pairs perfectly with apples and, combined, both delicious ingredients make up a wonderful quick bread. The name “quick bread” comes from the fact that the batter can be baked immediately and does not require yeast or rising time. Quick breads can be enjoyed for breakfast or as a dessert and are perfect for new bakers!

Yields 1 loaf

Ingredients

  • ½ c (1 stick) unsalted butter, softened
  • ⅓ c granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 c all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ⅔ c milk
  • 2 c SnapDragon apples, peeled and diced, divided (about 1 large apple)
  • ½ c dulce de leche
  • 1 Tbsp melted unsalted butter
  • 1 Tbsp packed brown sugar
  • ¼ tsp ground cinnamon

Directions

  1. Liberally spray a loaf pan with non-stick spray. Preheat oven to 350º F.
  2. Cream butter and sugar using an electric hand mixer or stand mixer on medium speed until the mixture is light in color and fluffy. Reduce speed and beat in one egg at a time. Scrape down sides after each egg is added and continue to beat mixture, adding vanilla once both eggs are incorporated.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the mixer, alternating with the milk.
  4. Turn off the mixer and gently fold in 1 ½ c SnapDragon apple.
  5. Pour half of the batter into the greased loaf pan. Spoon half of the dulce de leche over the batter and swirl using a knife to create a marbled effect. Top with remaining batter and repeat swirling with remaining remaining dulce de leche.
  6. In a small bowl, mix the remaining apples with melted butter, brown sugar, and cinnamon. Spread evenly over batter, gently pressing apples into batter.
  7. Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean. Remove and allow to cool for 10 minutes in the pan. Remove loaf and cool completely on a wire rack before serving.
