Apple Cinnamon Oatmeal Bars

Ingredients

  • 2 ½ c old-fashioned rolled oats
  • 1 ¼ c whole wheat flour
  • 1 ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • ½ c (1 stick) butter, softened at room temperature
  • ⅓ c brown sugar, packed
  • ⅓ c white sugar
  • ½ c unsweetened applesauce
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 c diced SnapDragon apples (about 1 large apple or 1 ½ medium)
  • ⅓ c raisins

Directions

  1. Preheat oven to 350º F. Line an 8” x 8” baking dish with parchment paper.
  2. Whisk together oats, flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, cream butter and sugar using an electric mixer. Beat in applesauce, then egg and vanilla extract.
  4. Slowly add the dry ingredients until just combined. Fold in apples and raisins.
  5. Pour batter in an even layer in the baking dish and distribute with a spatula.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool on a wire rack before slicing into 16 bars.
